Our Community Fair Trade organic alcohol comes from sugarcane that's organically grown on small farms in the foothills of the Andes in Ecuador. The organic farming methods used by the CADO co-operative help preserve the natural beauty and wildlife of the Cotopaxi provinces in the foothills of the Andes. Ripe sugarcane is cut by hand, and then fed through a grinder to extract the juice. The juice is left to ferment for 24 hours and then heated over a fire to distil the alcohol.
